Palma de Mallorca, Spain, 2012/05/24 - Following its recent opening in one of the most exclusive locations in the Eternal City, the Gran Meliá Rome Villa Agrippina hotel is pleased to present its culinary jewel: the restaurant VIVAVOCE, created by the two Michelin star chef Alfonso Iaccarino.

VIVAVOCE is the flagship restaurant of the hotel and promises to become a destination for fine Mediterranean dining in Rome. “The south of Italy, where I come from, has many historical, cultural and emotional links with Spain. Situated on the main floor of the hotel, VIVAVOCE is a Mediterranean world-class culinary experience with a warm human touch. Alfonso Iaccarino is the soul of the restaurant. An acclaimed chef with two Michelin stars, cooking has been his lifelong passion: “I belong to the fourth generation of restaurateurs and my sons, Ernesto and Mario, who have decided to follow the family tradition, will be the fifth generation”, he says.
Iaccarino’s food is inspired by his land, the Mediterranean, and by his family. The legacy of his grandparents and his mother Titina, whose name is the inspiration for one of the dishes on the menu, is embedded in his culinary style. “We try to convey the flavours and aromas of nature and so we search for organic products, almost to the point of obsession, ideally working with as many local products as possible. This idea leads us to the simplification of techniques and procedures. In terms of new developments, we are now working with flower distillation and natural yeast”, he adds.
For Iaccarino, the most important thing is to care for the customer. “At VIVAVOCE we want to convey emotions, for the diners to experience the story that every dish tells”, he explains. The Chef recommends the delicious couscous with octopus and saffron, the cheese gnocchi with plum tomatoes and, to finish, he suggests his grandfather Ernesto’s dessert, a wonderful chocolate soufflé.
