This highly beneficial food additive is used as a substitute for salt and is capable of reducing sodium content in processed foods by up to 50 per cent.
High levels of sodium consumed with food are associated with hypertension and subsequently, cardiovascular ailments. However, reducing sodium in food products is a major challenge for manufacturers as it negatively impacts palatability. Jungbunzlauer has effectively met these challenges with sub4salt®.

For instance, although the sodium content of sub4salt® is much lower than salt, it still tastes almost entirely like salt and thus imparts an identical taste to the food item it is used in. No competitor has been able to replace salt in the 1:1 ratio.
"End products using sub4salt® do not give rise to any side-effects such as bitter, metallic or broth-like taste that is commonplace in products using MSG, yeast extracts or potassium chloride," adds Telles. "Moreover, the product can be easily handled by manufacturing personnel as it does not cause dust formation nor have any complex mixing or calculation requirements."
Being a 1:1 substitute, the dosage levels of sub4salt® are similar to that of salt and hence do not create any complexity in terms of change in recipe of the end-product for end-users. In addition, Jungbunzlauer provides its customers with a 3 years shelf life guarantee from the date of manufacture.
"Several tests with sub4salt® in various formulation have resulted in superior outcomes across different application areas," remarks Telles. "For example, a complete substitution of salt in snacks item with sub4salt® reduced sodium content by up to 35 per cent with negligible or no impact on the flavour profile."
Jungbunzlauer's sub4salt® complies with the new EC regulation 1924/2006 pertaining to nutrition and health. It also meets the latest purity requirements of the Food Chemicals Codex (FCC) and the Commission Directive 96/77/EC and contains only permitted additives which comply with the EC Directive 95/2/EC.
